Australia has a number of geographic characteristics that favour its olive oil industry. An ideal climate; much of the continent enjoys comparable conditions to the Mediterranean olive growing regions which currently supply most of the worlds oil. Extensive land areas suitable for the development of olive groves.

Relatively few pests and diseases; three of the six pests and diseases most destructive of olives and olive trees in the world have not been reported in Australia.

Australia has a number of technical and structural advantages that favour its industry over many of its competitors. Which are as followed: Modern processing and storage facilities, mechanised and efficient groves, skilled labour, highly developed trade and marketing arrangements and highly developed national infrastructure.

Substituting olive oil for other fats in your diet can:
- Reduce blood pressure.
- Inhibit the growth of some cancers.
- Benefit people at risk of some cancers.
- Lessen the severity of asthma and arthritis.
- Actually helps your body maintain a lower weight.

An olive oil rich diet is not only a good alternative in the treatment of diabetes; it may also help to prevent or delay the onset of the disease by preventing insulin resistance and its possible harmful implications by raising HDL cholesterol, lowering triglycerides, and ensuring better blood sugar level control and lower blood pressure.

Buying and Storing Olive Oil
Exposure to air, light and heat can turn olive oil rancid. This also destroys the healthy, antioxidant
properties of the oil.

To reduce the risk of exposure:
- Look for olive oil that is sold in darkly tinted bottles.
- Store your olive oil in a dark cool cupboard.
- The smaller the container you use the less likelihood of exposing the oil to air as you use it.
- For larger supplies of oil look out for the “Australian” developed “Oil in a box”. It protects oil from
  exposure to air and light. The result, great tasting, fresh oil, right till the last drop.
