PRODUCTION NOTES


Illalangi achieves environmentally sustainable production in both the vineyard and groves through drip irrigation, state-of-the-art soil moisture measurements and integrated pest management systems.

Illalangi has employed the internationally recognised wine making team at Barossa Vintners to tailor its wine to their requirements. Screw cap closure ensures that the freshness and vibrancy of the wine is maintained for the consumer to enjoy, just as intended.

Processing and packaging Illalangi olive oil is also a state-of-the-art procedure. Olives are processed within 24 hours of harvest, ensuring ultimate freshness and quality. All Illalangi oil, other than the 100ml and 375 ml bottles, is packaged in the Australian developed "oil cask" which maintains freshness and longevity of the oil until the last drop, protecting it from exposure to air and light, the two worst enemies of oil quality. Illalangi oil casks are available in 2 litres for domestic use or 10 litres for food service.

Illalangi Native Dukkah is a superb accompaniment for the oil, featuring a base of Riverland almonds, pistachios and seeds, subtly blended with native spices.
