Chilli Con Carne
INGREDIENTS
2 tsp Illalangi Extra Virgin Olive Oil 500g lean beef mince 1 large or 2 small onions, peeled and chopped 2 cloves garlic, crushed 1 can of 425g chopped tomatoes one third of a cup tomato paste 1 cup salt-reduced beef stock half cup water 1-2 tsp chilli powder or 2 tsp Tabasco sauce half tsp ground cumin half tsp ground coriander freshly ground black pepper, to taste 1 can of 425g red kidney beans, drained 1 tbsp cornflour, mixed to a paste with a little water |

METHOD
1. Heat oil in pan over high heat, add onion and garlic and cook until onion softens and is transparent. 2. Add the mince and cook, stirring occasionally, until meat is browned. 3. Add tomatoes, tomato paste, beef stock, water, chilli powder, cumin, coriander, and pepper and stir to combine. 4. Reduce heat and allow to simmer for about 30 minutes stirring occasionally. 5. Mix through the cornflour paste and cook stirring constantly until the mince mixture thickens. 6. Add the beans and mix through gently. 7. Bring mixture to the boil then reduce heat and leave at low simmer stirring occasionally until ready to serve. 8. Serve with steamed rice and a tossed green salad.
