INGREDIENTS
Basic vinaigrette
Makes ½ cup (125ml)
Make vinaigrette as you need it. It is quick and simple and for the ultimate taste should never be made in a larger quantity then required.
Ingredients
½ tsp sea salt, or to taste
1 tbs red wine vinegar
6 tbs Illalangi extra virgin olive oil
Fresh ground pepper to taste
Method
Whisk all ingredients together in a small bowl. Drizzle each ingredient over the salad at the time of serving, in the order listed.
Variations
Fruit & Balsamic Vinaigrette
Replace red wine vinegar with ½ balsamic and ½ fruit vinegar, such as raspberry or pear.
Basil Vinaigrette
Add ½ tbs very finely shredded basil leaves
Whole grain mustard Vinaigrette
Add 1 ½ tbs whole grain mustard
Tomato Vinaigrette
Add finely diced flesh of 1 ripe tomato, skinned and seeded.
Pesto Vinaigrette
Add one tbs or Illalangi Black Olive Pesto or Olive, Sundried Tomato & Capsicum Pesto, to 2 tbs of basic vinaigrette.
Eschalot Vinaigrette
Add 1 or 2 eschalots very finely chopped.
Garlic Lemon Vinaigrette
Replace vinegar with 2 tsp freshly squeezed lemon juice.
Add: One clove of garlic, very finely chopped, 1 tsp lemon zest, finely grated, 1tbs parsley finely chopped.
