Tiramisu Chia Pudding

Serves 2


1/4 Cup chia seeds
3/4 Cup almond milk
1/4 Cup cold coffee
2 medjool dates
1 tbsp cacao powder
1 scoop collagen
Pinch salt

1/4 Cup greek yogurt
1 tbsp cocoa powder
1 tbsp almond milk
Cacao nibs (optional for topping)


  1. Blend all ingredients until almost smooth, scraping down sides as needed.
  2. Divide between two jars, seal, then set in the fridge for 2 hours minimum to thicken.
  3. When ready to eat combine topping ingredients and spoon overtop. Top with cacao nibs and enjoy.
