Easy Slow Cooked Chicken & Rice

Serves 6


  • Chicken tenderloins or fillets, roughly 1kg.
  • 500g Illalangi Pasta Sauce
  • 1 Capsicum
  • 1 Onion
  • 400g Canned Beans (Four Bean Mix)
  • 400g Can of corn
  • 400g Can of tomatoes
  • 3/4 Cup Rice, to serve
  • Sour Cream or Coconut Cream (optional)


Any pre-made fajita or burrito seasoning works here, but if you would like to make your own combine the following ingredients in a small bowl:


Begin cooking roughly 4 hours before serving.

  1. Season chicken and place into slow cooker with pasta sauce and canned tomatoes. Turn slow cooker onto high.
  2. Chop capsicum and onion up and mix in with chicken. Leave for an hour.
  3. Drain liquid from canned corn and beans and add to slow cooker. Stir through.
  4. Begin cooking 3/4 cup rice half an hour prior to serving. Add a tablespoon of sour cream on top if desired.
